Grilled corn, diced avocado, cherry tomatoes, basil, red onion, and a lime-honey dressing. The salad every summer barbecue needs on the table.
Grill directly on gas flame or griddle until charred on all sides. Cool slightly then cut kernels off. The char is flavour — do not fear it.
Cube avocado and toss immediately in lime juice. Add to salad at the very last moment to preserve colour and texture.
Whisk lime juice, honey, olive oil, pinch of salt and cayenne. Should be sweet, bright, and slightly hot.
Combine corn, tomatoes, onion, and basil. Fold in avocado gently. Dress and taste. Season. Pile into a serving bowl.
